Tomato Achar is a traditional Guyanan recipe for a classic spiced chilli, onion and tomato relish that's served almost ubiquitously as a condiment. The full recipe is presented here and I hope you enjoy this classic Guyanan version of: Tomato Achar.

Ingredients:
1 onion, chopped
2 garlic cloves, chopped
1 tbsp vegetable oil
1 tbsp curry powder
3 jalapeño chillies, thinly sliced
3 tomatoes, chopped
lime juice
salt to taste
Method:
Fry the onions and garlic in oil until the onion is soft (about 5 minutes). Add the curry powder, tomatoes, jalapeño chillies and simmer on low heat until the tomatoes are cooked through and the mixture has attained a sauce-like consistency (about 20 minutes). Season with the salt and lime to taste.
Bottle in a clean, hot jar. Allow to mature for a couple of weeks before use.
