Ingredients:
2 dessert apples, cored and cut into wedges
2 firm pears, cored and cut into wedges
juice of 1/2 lemon
25g light muscovado sugar
1/4 tsp ground allspice
25g unsalted butter, melted
For the Sauce:
125g butter
100g light muscovado sugar
6 tbsp double cream
Method:
Toss the apples and pears in the lemon juice to prevent them from discolouring.
Mix the sugar and allspice together and sprinkle over the fruit now thread the fruit pieces onto skewers (if using wooden or bamboo skewers soak in a bowl of water for 20 minutes before use).
For the toffee sauce, combine the butter and sugar in a saucepan and heat, stirring gently, until the butter has melted and the sugar has dissolved. Add the cream to the pan and bring to a boil. Continue boiling for 2 minutes then take off the heat and set aside.
In the meantime, place the fruit kebabs on a pre-heated barbecue and cook for 5 minutes, turning frequently and basting frequently with the melted butter, until the fruit is tender.
Transfer the kebabs to warmed serving plates and serve with the toffee sauce (this should be allowed to cool a little before serving).
