This is a classic Chinese dessert of battered banana fritters served in a caramel sauce.
Ingredients:
For the Bananas:
70g self-raising flour
1 egg, beaten
5 tbsp iced water
4 large, ripe, bananas
3 tbsp lemon juice
2 tbsp rice flour
vegetable oil for deep frying
For the Caramel:
115g caster sugar
4 tbsp iced water
2 tbsp sesame seeds
Method:
Sift the self-raising flour into a bowl, form a well in the centre, add the beaten egg and the ice water and beat the ingredients together to form a smooth batter.
Peel the bananas then cut into 5cm lengths. Use your hands to carefully shape the pieces into balls. Brush these all over with the lemon juice (this will stop them from discolouring) then roll in the rice flour until evenly coated.
Heat oil in a wok to a depth of 6cm or in a deep fryer until it reaches 180°C (when a cube of bread will brown in 30 seconds). Dip the banana balls in the batter to coat then drop into the hot coil. Cook in batches for about 2 minutes each, or until the bananas are golden all over. Remove with a slotted spoon and drain on kitchen paper.
In the meantime, prepare the caramel. Place the sugar in a small saucepan and set over low heat. Add 4 tbsp iced water and heat, stirring, until the sugar dissolves. Bring to a simmer and cook for 5 minutes then take off the heat and stir in the sesame seeds.
Add the deep-fried banana balls to the caramel and turn to coat. Scoop out with a spoon and immediately drop into a bowl of iced water to set.
As soon as they are added, lift them out of the water, drain them and divide between four individual serving bowls. Serve whilst the centres of the banana fritters are still hot.
