Though a classic Chinese dessert dish, this also makes and excellent alternative dessert for Halloween, as it incorporates all the traditional Halloween flavours.
Ingredients:
For the Apples:
4 apples, peeled, cored and cut into thick slices
groundnut or vegetable oil, for deep frying
For the Batter:
115g plain flour
1 egg, beaten
125ml cold water
For the Toffee Syrup:
4 tbsp sesame oil
225g sugar
2 tbsp toasted sesame seeds
Method:
Sift the flour for the batter into a bowl then beat in the egg. Slowly add the cold water, beating constantly with a fork to form a smooth, thick, batter.
In the meantime, heat oil for frying in a deep wok or a deep fryer until it reaches 180°C (when a cube of bread dropped in the oil brown in 30 seconds).
Dip the apple rings in the batter to coat then gently drop into the hot oil and deep fry on both sides until golden brown on both sides. Remove with a slotted spoon, drain on kitchen paper and set aside to keep warm.
For the toffee syrup, heat the sesame oil in a small, heavy-based, saucepan. When the oil is beginning to smoke add the sugar, stirring constantly, until the sugar melts and begins to caramelize and turn golden brown.
Take the pan off the heat then stir in the sesame seeds before pouring into a large, flat, saucepan. Set the pan over very low heat then add the apple slices, a few at a time, turning them once. When they are completely coated briefly dip each slice in a bowl of cold water to set the toffee syrup.
Serve immediately.
