Tirk Umpel (Tamarind Sauce) is a traditional Cambodian recipe for a classic dipping sauce of tamarind pulp cooked in water with sugar, fish sauce, garlic and hot chillies. The full recipe is presented here and I hope you enjoy this classic Cambodian version of: Tamarind Sauce (Tirk Umpel).

Ingredients:
80ml water
2 tbsp tamarind pulp (without seeds)
2 tbsp sugar
2 tbsp fish sauce
2 garlic cloves, crushed
2 hot chillies, finely chopped
Method:
Combine the water and tamarind pulp in a small pan. Heat gently, stirring constantly, until bubbling. Add the sugar, fish sauce, garlic an hot chilli and stir until all the sugar has dissolved.
Take off the heat and set aside to cool. Place in a small dish, adjust the sweetness and saltiness with sugar and fish sauce, then serve as a dipping sauce.
