This is a classic Albanian salad that's traditionally served as a starter, though it also makes a rather wonderful accompaniment to meatballs and barbecued meat.

Ingredients:

1 head romaine lettuce
1 bunch spring onions, chopped
2 hard-boiled eggs, sliced
salt and black pepper, to taste
2 tbsp extra virgin olive oil
1 tbsp lemon juice

Method:

Thoroughly wash the lettuce leaves then rip into bite-sized pieces. Add to the base of a salad bowl then scatter the spring onions over the top. Decorate with the sliced egg and season liberally.

Just before serving drizzle the olive oil and lemon juice over everything.
