Thattukada Chicken Fry

Thattukada are covered carts seen on the roadsides of Kerala that serve street food. One of the most popular dishes is the chicken fry, the recipe for which is presented here.

Ingredients:

600g (1 ½ lbs) chicken portions (these can be chicken quarters, legs, breasts or even bite-sized pieces)
6 curry leaves
Oil, for deep frying

For The Marinade:
1 sprig curry leaves, finely chopped
1 tbsp minced ginger
1 tbsp minced garlic
½ tsp ground turmeric
2 tsp ground coriander
1 tsp garam masala
1 ½ - 2 tsp red chilli powder
1 tsp rice flour
Juice of 1 small lemon
Salt to taste

Method:

Combine all the ingredients for marinade – curry leaves, ginger, garlic, ground turmeric, ground coriander, garam masala, red chilli powder, rice flour, lemon juice, and enough salt – in a large bowl. Add water (if needed) to make a smooth paste.

Spread this paste all over the chicken then set aside to marinate for at least 30 minutes in the refrigerator.

To prepare the fried thattukada chicken, heat oil in a deep pan over medium-high heat. When the oil is hot enough, slide in chicken pieces (as the chicken is being deep fried make sure you have enough oil to submerge the chicken pieces). When one side is done (about 10 minutes), flip the chicken pieces over to cook the other side.

When chicken is nearly done, add the curry leaves and fry along with the chicken.

Drain the chicken on kitchen paper and serve warm.
