Thai Green Curry Paste II

Ingredients:

1/2 tsp salt
1/2 tsp black peppercorns
1 tsp fresh galangal, sliced into slivers
2 tsp Kaffir lime leaves (bai magroot), finely shredded
2 tbsp fresh coriander (including roots and stalks)
1 1/2 tbsp lemongrass (base of stalks only), sliced into rounds
1 1/2 tbsp shallots, peeled
2 1/2 tbsp small, green chillies (whole)
3/4 tsp shrimp paste
(belachan)

Method:

Using a stone mortar and pestle add the galangal, lime leaves, lemongrass, black peppercorns and salt. Smash and grind into a fairly uniform paste then add the garlic, shallots, chillies and coriander. Once more smash and grind the ingredients until fairly uniform (it should be slightly 'chunky' though).

When finished, add the shrimp paste and pound until thoroughly mixed.
