This is a classic recipe for a dessert cake from Wadebridge, Cornwall.

Ingredients:

180g self-raising flour
pinch of salt
90g butter, softened
90g sultanas
90g caster sugar
2 eggs, well beaten
1 cooking apple, peeled and cored
1/2 tsp ground cinnamon, for topping
1 tsp granulated sugar, for topping

Method:

Sift together the flour and salt into a bowl. Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs. Now stir in the sultanas and caster sugar. Add the eggs and stir into the flour mix to combine.

Turn the mixture into a shallow, 20cm square baking tin that's been well greased with butter. Cut the apple into slices and arrange these over the cake batter. Mix the cinnamon and sugar in a small bowl and scatter this mixture over the apples.

Transfer to an oven pre-heated to 200°C and bake for about 20 minutes, or until the bake batter is cooked and the apples are golden brown.

This cake can be served hot or cold and is traditionally accompanied by clotted cream, but it also works with custard.
