Tej

This is a traditional Ethiopian mead (made from fermented honey which traditionally has the comb still in there). It is then cooked with hops as a bittering agent.

Ingredients:

750ml bottle mead
6 hops (fuggles etc are good)

Method:

Add the hops to the mead, bring to a simmer and turn off the heat.

Allow to cool naturally and remove the hops then chill in the refrigerator and serve in wine glasses.
