Ingredients:

2 tbsp onion powder
2 tbsp garlic powder
2 tbsp brown sugar
1 tbsp dried thyme
1 tbsp allspice
1 tbsp black pepper
1 tsp cayenne pepper (adjust to taste for spiciness)
1 tsp smoked paprika
1/2 tsp freshly-grated nutmeg
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp hot chilli powder (I usually use scotch bonnet powder or Nigerian ata rodo)

Method:

Mix all the ingredients together in a bowl and then spoon into an air-tight container. Store in a cool, dark, cupboard.

Use it to season chicken, pork, fish, or even vegetables for that classic jerk flavour.
