Ingredients:

4 onions, chopped
500g bell peppers, chopped
3 tomatoes, chopped
200g white cheese, such as Greek feta, crumbled by hand
500ml yogurt
2 tbsp flour
4 eggs
oil
salt and fresh parsley, chopped, to taste

Method:

Heat a little oil in a pan and add the onions and bell peppers, sautéing until the onions are golden brown (about 10 minutes). At this point, add the tomatoes.

After sautéing everything in oil, add salt and parsley to taste. The peppers should still retain a little crunch.

In another bowl, beat the eggs, add the flour and yogurt, whisking until smooth.

Take a deep baking dish and lightly grease the base with oil. Pour in the crumbled cheese, creating as even a layer as possible.

Transfer the vegetable mixture from the pan to the baking dish, creating a second compact layer.

For the topping, pour over the yogurt and egg mixture, making sure to cover all the vegetables underneath as much as possible.

Transfer the baking dish to the centre of an oven pre-heated to 220°C and bake for about 45 minutes.
