Tatale (Plantain Cakes)

Ingredients:

2 over-ripe medium plantains (black and soft)
1 small onion, finely chopped or grated
30 to 50 g self-raising flour
5 ml (1 tsp) red palm oil (optional)
salt and black pepper, to taste
oil, for frying

Method:

Peel the plantains and mash them thoroughly. Place in a bowl and add just enough flour to bind the plantains together. Add the onion, palm oil and season to taste. Mix thoroughly and allow to stand for 20 minutes. Heat oil to a depth of about 5cm in a large pan or wok.

When hot (a piece of onion dropped in will sizzle), fry spoonfuls of batter in the oil until golden brown. Drain on kitchen paper and serve with hot sauce.
