Tarte au Sucre (Sugar Pie)

Tarte au Sucre (Sugar Pie) is a traditional Canadian recipe (from Quebec) for a classic dessert of a very sweet pie of a brown sugar and evaporated milk custard baked in a pate brisee shell. Ingredients:

400g brown sugar
1 1/2 tbsp plain flour
5 dessert spoons butter, melted
1 egg, beaten
250ml evaporated milk
1/2 tsp vanilla extract
enough Pâte Brisée for two 20cm pie shells

Method:

In a bowl, combine the sugar and flour. Add the milk, melted butter, egg and vanilla and mix thoroughly to combine.

Roll out your pastry and use to fill two 20cm pie dishes. Trim the pastry neatly then fill the pie shells with the sugar mix. Transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until the filling is set and the pastry is golden.

Serve warm or cold.
