Tarragon Turkey a Classic British recipe for a dish of turkey breast steaks coated with mustard, garnished with tarragon sprigs that are wrapped in bacon and cooked on a barbecue.

Ingredients:

4 turkey breast steaks (about 175g each)
4 tsp wholegrain mustard
8 fresh tarragon sprigs
4 rashers smocked back bacon
salt and freshly-ground black pepper, to taste
salad leaves, to accompany
fresh tarragon sprigs, to garnish

Method:

Season the turkey liberally with salt and black pepper. Using a round-bladed knife spread the mustard evenly over the meat.

Place 2 tarragon sprigs on top of each turkey breast and wrap a bacon rasher around them to hold the herbs in place. Secure the bacon in place with a cocktail stick.

Sit the turkey on your barbecue over medium coals and cook for between 5 and 8 minutes per side. Transfer the meat to serving plates and garnish with the additional tarragon sprigs.

Serve with salad leaves.
