In essence, this is a Maltese-style frittata or tortilla (Spanish omelette) made with vermicelli.
Ingredients:
600g vermicelli (fine spaghetti)
4 eggs, beaten
salt and freshly-ground black pepper
25g margarine (or use butter or vegetable oil)
100g freshly-grated Parmesan cheese
Method:
Bring a pan of salted water to a boil, add the vermicelli and cook for about 7 minutes, or until al dente. Drain the pasta and place in a large bowl.
Add the eggs and cheese to the pasta, season with salt and black pepper then toss to combine.
Heat the margarine (or butter or oil) in a large frying pan, add the noodles and cook until fried crisp and golden brown on the base then carefully turn over and cook on the other side until golden. Serve warm.
