Tamina (Semolina Dessert)

Tamina (Semolina Dessert) is a traditional Nigerienne (from Niger) recipe for a classic vegetarian of fried semolina served topped with butter flavoured with honey and orange blossom water. Ingredients:

400g fine semolina
100g butter
4 tbsp honey
1 tsp orange blossom water
4 tbsp slivered almonds, toasted
1 tsp ground cinnamon

Method:

In a dry non-stick frying pan toast the semolina gently, stirring constantly, until lightly and evenly golden brown in colour.

Divide between four small serving dishes. Melt the butter in a pan, stir in the honey and orange blossom water.

Pour over the toasted semolina, sprinkle over the ground cinnamon, garnish with the toasted almonds and serve immediately.
