Tagliarini pasta, as used in this Italian recipe for Tagliarini al Porcini.
Ingredients:
5 shallots, finely chopped
3 large boletus mushrooms, chopped
5 tbsp butter
juice of 1/2 lemon
360ml double cream
225g fresh tagliarini pasta
salt and freshly-ground black pepper, to taste
freshly-grated Pecorino Romano or Parmesan cheese, to garnish
Method:
Melt the butter in a pan, add the shallots and boletus mushrooms and fry for about 6 minutes, or until golden brown. Stir in the lemon juice then add the cream and season with salt and black pepper. Cook slowly for about 10 minutes (do not allow to boil).
In the meantime, bring a large pan of salted water to a boil. Add the pasta and cook for about 2 minutes, or until al dente. Drain the pasta, return to the pan then pour over the sauce and toss to combine.
Turn into a warmed serving bowl, sprinkle the cheese over the top and serve.
