Taffi (Condensed Milk Toffee) is a traditional Togolese (from Togo) recipe for a classic toffee made from condensed milk cooked until it caramelizes and comes to the setting point. Taffi (Condensed Milk Toffee): Togolese toffee made from condensed milk cooked until it caramelizes and reaches the setting point.
Ingredients:
1 small tin of sweetened condensed milk
a little oil, for greasing
Method:
Pour the sweetened condensed milk into a little pan. Add a little oil then bring to a boil. cook stirring constantly, until the condensed milk has caramelized to your preferred darkness and has thickened to a paste.
Take off the heat and turn onto an oiled plate. Work the caramel with spatulas to elongate and cool then, as soon as it can be handled, form into balls and set aside to cool and harden.
You will need to work the toffee whilst still quite warm, as otherwise it will harden too much to be worked.
