Swiss Toffee

Ingredients:

90g butter
1 tbsp golden syrup
140g Caster sugar
200ml condensed milk

Method:

Combine the butter and syrup in a saucepan then add the sugar and bring to a boil. Continue cooking until the sugar has dissolved completely then add the milk. Continue cooking for about 20 minutes, stirring all the while (you must stir constantly as the mixture will tend to burn very quickly). Test the mixture by dropping a little in cold water. When it reaches the Soft-Ball Stage, the toffee is ready.

Turn into a buttered tray, allow to cool for 5 minutes then cut into squares with a greased knife. Allow to cool completely then cut into squares, warp in greaseproof paper and store.
