This is a traditional flavoured vodka from Denmark that uses sweet woodruff flower buds and leaves as a flavouring. For the leaves pick the top shoots just before the plant comes to a bloom (or right after the plant blooms) as this is when the leaves are at their most aromatic. For the flower buds, pick only fully-developed buds just before they begin to open.
Depending on quality, rinse the flower buds and/or leaves very carefully (but only if you have to) then put in a single layer and set aside in the shade to dry. Pick a clean glass jar (or jars) with a tight-fitting lid with the flower buds or leaves then cover with unflavoured vodka.
Secure the lids tightly then set aside to steep in a dark place at room temperature. Depending on what you used, allow the flower buds to steep for 24 hours and the leaves to steep for 2 to 3 days. If using dried leaves steep for up to 14 days.
Each day, shake the jars lightly to agitate then strain the infusion into a clean bottle or jar. The schnapps is ready to drink immediately, with no need to store it. If the drink is a little too strong for your taste then dilute with a little more vodka. If, however, the taste is a little to weak for you then add just a little sugar (best to use a simple syrup).
