This is a classic modern British loaf that contains sweet potatoes to colour and flavour the batter. As well as sweet potatoes, this bread can be made with any starchy material that can be boiled and mashed such as yams, plantains and eddoes.
Bring a pan of water to a boil, add the sweet potato pieces and and cook for about 10 minutes, or until soft. Drain thoroughly in a colander, turn into a bowl and mash with a fork until smooth.
In the meantime, mix together the water, honey, oil and orange juice in a large mixing bowl. Stir in the mashed sweet potatoes along with the semolina and 3/4 of the flour. Add the yeast, cinnamon and orange zest then mix thoroughly to bring these ingredients together as a dough. Cover and set aside to stand for 10 minutes.
Finely dice the butter, then knead into the dough along with the remaining flour. Knead the mixture for 5 minutes, or until the dough is smooth. Turn the resultant dough into a lightly-greased 675g loaf tin then cover and set aside in a warm place to rise for about 1 hour, or until doubled in volume.
After this time, transfer the loaf to an oven pre-heated to 190°C (Gas Mark 5) and bake for between 45 and 60 minutes or until the base of the loaf sounds hollow when rapped. Allow to cool and serve warm, cut into slices.
