Fruity Duck: Classic Canadian recipe for a barbecue dish of chicken thighs in a maple, orange, ketchup and Worcestershire sauce marinade thats cooked on a barbecue and served with focaccia bread, salad and orange slices.

Ingredients:

12 boned chicken thighs, skinned
5 tbsp maple syrup
1 tbsp caster sugar
finely-grated zest of 1/2 orange
juice of 1/2 orange
2 tbsp tomato ketchup
2 tsp Worcestershire sauce

To Garnish:
orange slices
sprigs of flat-leaf parsley

To Serve:
focaccia bread
salad greens
cherry tomatoes, quartered

Method:

Using a sharp knife cut 2 or 3 slashes in the flesh of the chicken. Arrange the chicken pieces in a shallow, non-reactive dish.

For the marinade, mix together the maple syrup, sugar, orange zest and orange juice with the ketchup and Worcestershire sauce. Pour this marinade over the chicken, turning to coat evenly. Cover with clingfilm (plastic wrap) and set aside to marinate in the refrigerator for at least 2 hours.

Once marinated, remove the chicken (reserve the marinade) and set on the grill rack of a barbecue. Set over hot coals and cook for 20 minutes, turning and basting frequently with the reserved marinade.

Arrange two pieces of chicken per serving. Garnish these with slices of orange and a sprig of parsley. Serve with focaccia bread, salad greens and the cherry tomatoes.
