This is a classic South Sudanese recipe for okra cooked in a tomato base with kombo, a local form of potash (you can substitute bicarbonate of soda). This is a specialty of the Kakwa tribe from Yei, South Sudan
Ingredients:
500g Okra (2 cups) cut into 6mm (¼ in) thick slices, (slice off and discard both ends)
25g (½ cup) onion, chopped
2 tomatoes, diced
Kombo or ½ tsp of bicarbonate of soda
1 tbsp vegetable oil
sea salt, to taste
1 habanero chilli, finely chopped
750ml-1l (3-4 cups) Water
Method:
Pour 250ml (1 cup) water bring to a boil then add 1/2 tsp bicarbonate of soda.
At this point mix in the onions and bring to a boil over medium heat. Now add in the sliced okra and 500ml (2 cups) water.
Cover with a lid and cook for 15 minutes, or until the okra is tender. At this point add in the tomatoes and 1 tbsp oil. Season to taste with salt and add the hot chilli.
Continue cooking for 5 minutes more then serve.
