Breadfruit is a staple in Saint Vincent and the Grenadines, and when paired with crispy fried jackfish, it’s a match made in heaven.

This dish is simple yet packed with flavour, making it a favourite among locals and visitors alike.

Ingredients:

1 medium breadfruit
2 jackfish fillets
120g flour
1 tsp paprika
2 tsp garlic, finely minced
Salt and freshly-ground black pepper to taste
Oil for frying

Method:

Start by roasting the breadfruit. Preheat your oven to 190°C. Cut the breadfruit into quarters, remove the core, and score the flesh.

Rub with oil, sprinkle with salt, and roast for about 45 minutes, or until tender.

For the jackfish, mix flour, paprika, garlic, salt, and pepper on a plate. Coat the fish fillets in the seasoned flour mixture, making sure it adheres to both sides of the fish.

Place a large frying pan over medium heat. Once hot add oil for shallow frying. As soon as the oil is hot add in the fish and fry until golden and crispy on both sides.

Serve the roasted breadfruit alongside the fried jackfish for a truly authentic experience.
