Saint Vincent Fry Bakes
Saint Vincent Fry Bakes is a traditional Saint Vincent and the Grenadines recipe for the local equivalent of Caribbean Johnny cakes made with a flour, baking soda and sugar batter with milk and yeast that's fried to cook. These are Johnny Cakes, in the style of Saint Vincent and the Grenadines. It turns out that Johnny Cakes were called Johnny Bakes, but the original term was actually a 'journey bake', cooked especially so that it will remain edible on a long journey. Whatever the origin and etymology, they have become a Caribbean staple.
Ingredients:
700g plain (All-purpose) flour
200g Brown sugar
1 tbs Baking powder
750ml Warm water
1 tsp Salt
250ml milk
1 tbsp Yeast
1 tbsp sugar
1 tbsp flour
Method:
In a mixing bowl, combine the flour, baking powder, and 200g of brown sugar.
In a separate bowl combine 250ml warm water, the salt, 1 tbsp flour, 1 tbs brown sugar, and the yeast. Let this starter mix sit in a warm spot until frothy (about 10 minutes).
Form a well in the centre of the flour. Pour in the yeast mixture then add the remaining warm water. Mix to combine, forming a dough. Add more flour to dough as needed, kneading until the dough becomes smooth and elastic (you might need up to 60g additional flour).
Turn the resultant dough onto a lightly-floured work surface and knead for about 10 minutes, until smooth and elastic. Shape into a ball, place into a greased bowl then cover with a damp cloth and set aside in a warm place to prove for 20 minutes.
After this time, pinch off pieces of dough, shape, and fry until golden brown. You can dry fry in a non-stick pan, shallow fry in oil or butter. Do not use too high a heat as you want the johnny cakes to cook all the way through as well as puffing up and colouring nicely on the outside.
