Doughboy
Doughboy is a traditional Saint Vincent and the Grenadines recipe for a classic yeast-leavened sweet breakfast bread incorporating coconut and sweet spices that's oven baked to cook. These are baked breads incorporating coconut and sweet spices that are typically served for breakfast.
Ingredients:
700g plain flour
250-375ml of water
100g of margarine (or butter), diced
1/2 tsp salt
100g of lard or vegetable shortening
1/2 tsp freshly-grated nutmeg
1/2 tsp ground cinnamon
150g of grated coconut (fresh)
120g of brown sugar
1 tbsp yeast (instant)
Method:
Sift together the flour and salt into a mixing bowl. Add in the diced fats and cut into the flour with two knives.
Mix in the spices and the yeast then stir through the coconut. Form a well in the centre, and add 250ml water. Bring the ingredients together, adding more water as needed until you have a smooth and elastic dough.
Knead the dough for 10 minutes then cover the bowl with a damp cloth and set aside in a warm spot to rise until doubled in volume (about 1 hour).
After this time, knock the dough back then divide into four pieces. Set these on a greased baking tray, cover with oiled clingfilm (plastic wrap) and set aside to rise for 20 minutes. In the meantime pre-heat your oven to 160°C.
Remove the clingfilm and transfer the breads to the centre of your oven. Bake for about 80 minutes, or until nicely risen and golden brown.
Remove from the oven and allow to cool, but serve warm.
