Saint Vincent Curry Breadfruit

This is a classic vegetarian Caribbean curry from Saint Vincent and the Grenadines.

Ingredients:

500g green breadfruit (fresh, frozen or tinned) cut into chunks
2 sprigs of Thyme
2-3 Garlic cloves, minced
1 medium Onion, sliced into slivers
1 medium Bell pepper, diced
120ml Water (you may need more or less)
4 tbsp Vegetable or olive oil
3 tbsp curry powder
2 tbsp Tomato purée
1 tsp Salt
1/2 tsp Black pepper

Method:

Begin by preparing the breadfruit. Add the chunks of breadfruit to a pan of lightly-salted boiling water . Boil until the breadfruit pieces are tender and you can pierce them with a fork (about 10-12 minutes). Do not boil them too long or they will become mushy. Once cooked, drain in a colander they are cook and set aside.

For the curry: In a large saucepan, wok or deep frying pan over medium heat, heat the oil then fry the onions, bell peppers and garlic for 2-3 minutes, until aromatic and beginning to soften.

Add the curry powder, salt, black pepper, tomato paste followed by the water. Stir everything together then cover the pan and simmer for 5-7 minutes.

Stir in the breadfruit chunks and cook for a further 7-10 minutes.

Serve hot with your favourite accompaniment.
