Suriname masala powder

Masala is the classic Surinamese curry powder, based on turmeric and with the inclusion of the standard spices, coriander, cumin, fenugreek but also with allspice berries. This is a fairly mild masala powder, using only red kashmiri chillies for colour. Though you can add hot chilli (Scotch bonnet or habanero) powder to spice things up if you like (I tend to add fresh chillies separately to my curries).
Ingredients:
10 dried Kashmiri chillies
4 allspice berries
20g coriander seeds
1 x 3cm length of cinnamon, broken into pieces
1 tbsp cloves
1 tsp black peppercorns
2 tbsp dried turmeric pieces crushed
1 tbsp cumin seeds
2 tbsp fennel seeds
Method:
First crush the turmeric then chop roughly and set aside.
Place a pan over medium heat. Use to dry toast the chillies until crisp, then transfer to a plate and set aside.
Now add all the whole spices and toast until slightly darkened in colour and aromatic (about 2 minutes). Turn off the heat then add the crushed and chopped turmeric and the toasted chillies. Stir well to combine then take off the heat and turn out onto a plate.
Once cold, add the ingredients to a spice grinder. Grind to a fine powder. Allow to cool then store in a clean dry jar.
Curry Masala Powder keeps well in room temperature itself for at least 3 months.
