Sukuma Wiki is a traditional dish of cooked greens, tomatoes, onion and bell pepper served as a main dish or accompaniment with asida or Kisra. Jute leaves or cowpea leaves would traditionally be used, but you can substitute kale (as I'm doing here), Swiss chard or even spinach.
Ingredients:
1 medium onion, finely chopped
2 tbsp olive oil
3 garlic cloves, minced
1 finger chilli, finely chopped
3 medium ripe tomatoes, diced
2 medium red bell peppers, diced
1 bunch kale, finely chopped
1/2 tsp black pepper
1/2 tsp sea Salt
Method:
Heat the olive oil in a heavy-based frying pan. Add the onions and cook for 5-7 minutes, until soft and just starting to colour. At this point add the garlic and cook for 1 minute more.
Now add the diced tomatoes, chilli and bell peppers and continue to cook for 10 minutes before seasoning with the salt and black pepper.
Add kale (or your choice of greens). Stir well to combine then continue cooking, stirring occasionally, to ensure everything cooks evenly. Cover and continue cooking for 10 minutes, or until greens are wilted.
