Suja is a staple tea in Bhutan (and versions of it are made throughout the Himalayan regions). Essentially it's black tea made with creamy milk and butter (typically yak, but cow butter also works) with variable amounts of salt. For the tea to make sense, you need it to warm you standing outside on a sub-freezing morning. Under those conditions it really gives you a boost. Traditionally the tea is made by whisking, but you can also use a blender.

Ingredients


1l (4 cups) Water
2 black tea bags (gunpowder tea)
½ tsp Pink Himalayan salt (or to taste)
2 tbsp unsalted butter, softened
150ml milk top (this is the creamy to from whole milk: or blend equal amounts of milk and single cream)

Method:

Boil water, add the tea bags to a saucepan and pour over 1l boiling water. Bring to a simmer and cook for 5-10 minutes (depending on how strong you like your tea).

Remove and discard the tea bags then either pour the tea into a blender or a warmed heat-proof bowl. Add the remaining ingredients and either process or whisk until completely blended (allow the butter to fully melt before blending).

Pour into heat-proof glasses or mugs (traditionally wooden bowls are used) and enjoy.
