Strozzapreti (Penne Pasta with Cream and Bacon Sauce)
Strozzapreti (Penne Pasta with Cream and Bacon Sauce) is a traditional Sammarinese (from San Marino) recipe for a classic dish of home-made penned pasta served with bacon in cream. Ingredients:
1kg plain flour
3 eggs
generous pinch of salt
cold water
For the Sauce:
60g butter
150g streaky bacon, sliced
250ml double cream
Method:
Combine the flour and salt on a pastry board. Form a well in the centre then add the eggs and use your fingers to knead into the flour. Continue mixing, adding a little cold water, if necessary, until you have quite a hard dough. Knead the dough lightly until it becomes elastic then turn onto a floured work surface and roll out to about 5mm thick.
Cut into strips then roll these lengthways into tubes, moistening the edges so they can be sealed together. Cut at a diagonal into 3cm lengths.
Set the pasta aside for 10 minutes then prepare the sauce. Melt the butter in a pan, add the bacon and fry for about 8 minutes, or until it just renders its fat then stir in the cream, allow to heat through and take off the heat.
In the meantime, bring a pan of lightly-salted water to a boil, add the pasta and cook for about 4 minutes, or until just al dente. Drain the pasta, turn into a bowl then pour the cream sauce over the top and serve.
