Strawberry and Macadamia Blondies: A British recipe for a classic traybake cake of a white chocolate batter containing strawberries and macadamia nuts, cut into squares to serve.
Ingredients:
125g unsalted butter
200g white chocolate, chopped
100g light muscovado sugar
2 eggs
130g plain flour
pinch of salt
120g strawberries, chopped
100g macadamia nuts, roughly chopped
Method:
Melt the butter over low heat then cook gently for about 5 minutes or until it starts to turn a golden brown (but take care it does not burn, or it will be bitter). Turn into a cold heat-proof bowl, add half the chocolates and stir until melted.
In a separate bowl, whisk together the sugar and eggs until thick and golden. Add the flour, a pinch of salt and the chocolate butter then fold with a spatula until smooth.
Tip in the strawberries, nuts and the remaining chocolate and stir briefly to combine. Pour the batter into a 22cm square tin lined with greaseproof (waxed) paper then transfer to an oven pre-heated to 180°C (Gas Mark 4) and bake for 30 minutes.
The blondies are cooked when they are coloured lightly golden brown with a light crust on top, but are still a little squidgy in their centres.
Remove from the oven and allow to cool in the tin then turn out and cut into squares before serving.
