Strawberry Fairy Cakes: A British recipe for a small fairy cake topped with cream and jam (jelly) and garnished with a strawberry half.

Ingredients:

125g butter, softened
125g caster sugar
2 medium eggs
2 tbsp milk
125g self-raising flour
200ml double cream
100g strawberry jam
strawberry halves, to garnish
icing sugar, for dusting

Method:

Cream together the butter and sugar until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Now fold in the flour, adding it a tablespoon at a time.

Line the wells of a 12-well muffin tin or bun tin with paper cases (or mini-muffin cases) and divide the batter between them. Transfer to an oven pre-heated to 180°C and bake for between 20 and 25 minutes, or until well risen and golden brown on top.

Allow to cool in the tray for 5 minutes then turn out onto a wire rack to cool completely.

In a large bowl, whisk the cream for about 4 minutes, or until thick. Spoon into a piping bag then use to pipe rings or stars for birthdays and heart shapes for Valentine. Fill the shapes with jam then top each one with half a strawberry.

Dust with icing sugar and serve.
