Straw fries, also known as 'shoestring potatoes' are a very thin form of American-style french fries (french-cut [ie julienned]) potatoes that are deep fried in hot oil).
Ingredients:
3 large baking potatoes, peeled and cut into matchsticks
vegetable oil for deep frying
salt and freshly-ground black pepper, to taste

Method:
Heat oil in a deep fryer to 190°C. When hot, add the potato matchsticks and fry for 3 to 4 minutes, shaking occasionally to cook evenly, or until the potatoes are golden brown and cooked through.
Drain on kitchen paper, season to taste and serve immediately
