Sticky Guinness Pudding

This is a new twist on the traditional 'sticky toffee pudding' that I was recently sent by one of this site's readers. Guinness is used as the main liquid and it's served with a
Guinness-based caramel sauce.
Ingredients:
175g dates, stoned (pitted)
100ml water
100ml Guinness (or other stout)
1 tsp bicarbonate of soda
50g butter
175g sugar
2 eggs, beaten
175g self-raising flour
a few drops of vanilla extract
double cream, lightly-whipped, to serve
Method:
Combine the dates, water, Guinness and bicarbonate of soda in a pan. Bring to a boil then reduce to a simmer and cook for about 15 minutes, or until the dates have softened and broken down. Take off the heat at this point and set aside.
In a bowl, cream together the butter and sugar until pale and fluffy. Add the eggs, a little at a time, beating thoroughly to combine after each addition. Now add the flour and vanilla extract and mix thoroughly. Carefully fold in the date mixture into the flour mix and continue folding until well combined.
Transfer the resultant pudding mixture into a well greased baking tin (about 30 x 20 cm) then place in an oven pre-heated to 200°C and bake for about 40 minutes, or until well risen and cooked through. Allow the pudding to cool slightly then slice. To serve, place slices of the pudding onto plates and drizzle the Guinness Caramel sauce over the top. Garnish with spoonfuls of lightly-whipped cream and serve.
