Sticky Chicken Drumsticks: Classic British recipe for a barbecue dish of chicken in a sticky orange marmalade, orange and Worcestershire sauce glaze served with cherry tomatoes and salad leaves.

Ingredients:

10 chicken drumsticks
4 tbsp fine-cut orange marmalade
1 tbsp Worcestershire sauce
finely-grated zest of 1/2 orange
juice of 1/2 orange
salt and freshly-ground black pepper, to taste

To Serve:
cherry tomatoes
salad leaves

Method:

Using a sharp knife made 2 or 3 slashes in the flesh of each chicken drumstick.

Bring a large pan of water to a boil, add the chicken and bring back to a boil. Cover the pan and cook for 8 minutes then remove the chicken and drain thoroughly on kitchen paper.

For the baste, combine the orange marmalade, Worcestershire sauce, orange zest, orange juice and seasonings in a small pan. Heat gently, stirring continuously, until the marmalade melts and all the ingredients are well combined.

Brush the baste mixture over the parboiled chicken drumsticks then place on a barbecue over hot coals. Cook for about 10 minutes, turning frequently and basting with the marinade as you do so.

Carefully thread 3 cherry tomatoes onto a skewer for each person and cook on your barbecue for 2 minutes.

Transfer the chicken to a warmed serving plate. Serve with the cherry tomatoes and a fresh green salad.
