Steamed spareribs with black bean sauce (豉汁蒸排骨) is a classic recipe for a dish of chopped spareribs marinated in garlic, ginger, black bean sauce, soy sauce, rice sine, sugar and cornflour blend that's steamed to cook and served with shredded bell peppers.
Ingredients:
450g pork spareribs
1 garlic clove, crushed
3cm length
ginger, finely chopped
1 tbsp vegetable oil
2 tbsp
black bean sauce
1 tbsp dark soy sauce
1 tsp sugar
1 tsp rice wine (or dry sherry)
1 tsp cornflour
1 small red or green bell pepper, cored and shredded
Method:
Chop the spareribs into small pieces and add to a bowl along with the garlic, ginger and all the remaining ingredients (except the bell pepper and vegetable oil). Mix thoroughly to combine then set aside to marinate for 30 minutes.
Brush a heat-proof place or dish with the vegetable oil and pour the sparerib mixture into this. Place in a steamer over boiling water, add a lid and allow to steam over high heat for 30 minutes. Remove from the steamer, sprinkle the shredded pepper over the top and serve immediately.
