Hosta flower buds are edible and they look a little like miniature artichokes. They work well boiled or steamed and can be served as a starter, halved and accompanied by a dip.
Ingredients:
20 hosta flower buds
salt and freshly-ground black pepper
dipping sauce of your choice
Method:
Bring a pan of water to a boil. Wash the flowers and split in half lengthways if large. Place in a steamer basket and sit over the boiling water. Cover with a lid.
Steam for 8 minutes until bright green and just tender. Transfer to a bowl, season to taste with salt and black pepper and either serve as a starter with a dipping sauce or serve as an accompaniment.
