It's the seeds of Staghorn Sumac that contain the flavour (but the flowers do yield a lovely colour). Which means that if you pick the flowers to make this drink they need to be gathered in late August/Early September when the seeds have ripened. Now, you can extract the seeds to make this, but that's too much bother... just use the whole flower heads. This recipe is based on an 18th century original from the USA. Prior to sweetening the liquid can be bottled and used in place of vinegar. Note that Staghorn sumac seeds contain lots of tannins, which is why this recipe used cold brewing to reduce tannin leaching.
