Sri Lankan Curry Powder

This is a classic curry powder from Sri Lanka which, with the additon of ground rice also acts as a thickener.

Ingredients:

4 tbsp coriander seeds
3 tbsp cumin seeds
2 tbsp black peppercorns
2 tbsp basmati rice
1 tbsp cardamom pods you will only use the seeds from the pods, about 12 - 15 pods
3 tsp whole cloves about 10 -15 cloves (see notes)
2 tsp black mustard seeds
1 tsp fennel seeds

Method:

Place a non-stick pan over medium heat. Once hot add the rice and stir fry until it begins to turn a light brown then add all the remaining spices and the cardamom seeds. Stir fry for about 3 minutes, until the spices are aromatic and have begun to brown (do not allow the spices to burn or the curry powder will become bitter).

Take off the heat and turn out onto a plate to allow the spices to cool.

Once cool transfer everything to a spice or coffee grinder and render to a fine powder.

Store in an air-tight jar and use as needed.
