Spruce Tip Tea is a modern Canadian recipe for a classic tea made from an infusion of young spruce tips, citrus zest, cinnamon and nutmeg that is both calming and used as a springtime tonic. The full recipe is presented here and I hope you enjoy this classic British version of: Spruce Tip.

Ingredients:
1 handful (about 100g) spruce tips
3 strips of pared orange or lemon zest
1/2 cinnamon stick (optional)
1/4 nutmeg (optional)
spruce syrup, honey or maple syrup to sweeten, if desired
Method:
Warm your pot, add the spruce tips and honey then pour over 2 mugs of boiling water. Allow to steep for 10 minutes then strain into a mug, sweeten to taste (if desired) and drink.
This is a refreshing tea that makes an excellent springtime tonic and is high in vitamin C.
