Ingredients:
750ml water
200g sugar
1l fresh spruce tips
3 tbsp lemon juice
120ml champagne or white wine (optional)
Method:
Combine the water and sugar in a medium pan. Bring to a boil, and as soon as it is boiling add the spruce tips. Stir to mix then cover the pan and take off the heat. Set the syrup aside to infuse for 30 minutes then strain through a fine-meshed sieve.
Stir in the lemon juice and wine (if using) then pour the resultant liquid into an ice cream maker and churn according to the manufacturer's instructions. Serve spooned into glasses.
