Ingredients:
1l good quality olive oil
200g spruce tips (young ones, with the papery cases still attached)
Method:
Remove the papery cases from the spruce tips then wash well in cold water. Now dry thoroughly (don't let any water get into the oil).
Add the oil to a pan and heat until just warmed. Place the spruce tips in a sealable jar, pour over the oil then seal the jar and set aside in the refrigerator for about 2 weeks to infuse before use.
This makes a wonderful flavoured oil for a vinaigrette an marries well with green salads or petal-based salads.
