This is a springtime salad of urban wild greens, composed of sow thistle tops, common sorrel leaves and young dandelion leaves that are blanched and served with raw young linden (European lime) leaves. I haven't added any quantities, but a generous handful of each of the leaves is about right for a 4-person serving.

Ingredients:

linden (European lime tree) leaves
sow thistle tops
young dandelion leaves
common sorrel leaves
1 tbsp olive oil
pinch of salt
1 tsp cider vinegar

Method:

Bring a pan of lightly-salted water to a boil. Add the thistle tops, sorrel leaves and dandelion leaves and blanch for 3 minutes. Drain in a colander then toss in a bowl with the linden (lime tree) leaves.

Dress by tossing with the olive oil, salt and cider vinegar then serve immediately.
