Spicy Turkey and Sausage Kebabs: Classic British recipe for a barbecued kebab of turkey, spicy sausage and apples in a spicy basting sauce.

Ingredients:

1 whole turkey breast fillet (about 350g)
300g chorizo sausage
1 Granny Smith (or other tart eating) apple
1 tbsp lemon juice
8 bayleaves

To Baste:
6 tbsp olive oil
2 garlic cloves, crushed
1 red chilli, de-seeded and chopped
salt and freshly-ground black pepper, to taste

Method:

Cut both the turkey breast and the sausage into 3cm pieces. Core the apple then cut into chunks. Toss the apple pieces with the lemon juice to help prevent them from discolouring.

Thread the turkey and sausage pieces onto 8 skewers, alternating them with the apple chunks and the bayleaves (if using wooden skewers soak these in a bowl of water for 20 minutes beforehand).

Whisk the basting ingredients together in a bowl and use to brush over the kebabs. Cook the kebabs on a barbecue over hot coals for about 15 minutes, or until the turkey is thoroughly cooked through. During this time turn the kebabs frequently and baste with the basting mixture.

Serve immediately.
