Spicy Pork Ribs: Classic British recipe for a barbecue dish of parboiled pork ribs that are marinated in a spicy, sweetened, tomato-based sauce before being cooked on a barbecue whilst being basted with the sauce.
Ingredients:
1kg pork spare ribs
150ml passata (sieved tomatoes)
2 tbsp red wine vinegar
2 tbsp dark muscovado sugar
1 garlic clove, crushed
1 tsp dried thyme
1/2 tsp dried rosemary
1 tsp
chilli saucechilli sauce
red chillies, to garnish
mixed salad leaves, to accompany
Method:
If the spare ribs are a rack (ie joined together), carefully cut them into individual ribs with a sharp knife.
Bring a large pan of water to a boil then add the ribs. Cook for 10 minutes, then drain thoroughly. Arrange the ribs in a large, shallow, non-reactive dish.
For the sauce, combine the passata, red wine vinegar, sugar, garlic, dried thyme, dried rosemary and chilli sauce in a bowl. Whisk until thoroughly blended then pour this sauce over the ribs and turn to coat on all sides. Cover and set aside to marinate for 1 hour.
After this time, remove the ribs from the sauce (reserve the sauce for basting). Barbecue the ribs over hot coals for about 8 minutes, then remove to a cooler part of the barbecue and continue cooking for about 20 minutes more, turning frequently and basting with the remaining sauce each time you turn them.
Transfer the ribs to warmed serving plates, garnish with the red chillies and serve accompanied by mixed salad leaves.
