Here is an excellent way of using-up any leftover mincemeat you might have after Christmas. These also make an excellent alternative to mince pies for Christmas.
Mix together the flour, sugar, baking powder and mixed spice in a large mixing bowl.
Pour the oil into a mixing jug then add the eggs and beat lightly with a fork. Pour in the milk, whisk briefly then add to the dry ingredients.
Stir everything until just combined then fold in the mincemeat (do not over-work the batter or the muffins will be tough). Spoon the batter into 12 muffin tin wells that have been lined with paper cases.
Transfer to an oven pre-heated to 180°C (350°F) and bake for about 20 minutes, or until nicely risen and golden brown on top.
Transfer to a wire rack to cool. Serve warm, with coffee.
