Spiced Cobnut Marzipan
Spiced Cobnut Marzipan is a modern British recipe for a classic marzipan (nut paste) made from a blend of cobnuts (hazelnuts), sugars, egg yolks, cinnamon, honey and glycerine that can be used to make confections or substituted for ordinary almond marzipan on Christmas cakes. It's little known, but marzipan can be made with other nuts apart from almonds. The richer flavour of cobnuts (hazelnuts) make an excellent marzipan with a more grown up flavour.
Ingredients:
200g cobnuts (or hazelnuts), finely ground
100g icing sugar
125g soft brown sugar
3 egg yolks
2 tbsp liquid glucose
1 tbsp honey
1 tsp glycerine
2 tsp ground cinnamon
2 tsp vanilla extract
Method:
Sift the icing sugar into a bowl, add the ground hazelnuts and stir well to combine.
In the meantime, whisk together the brown sugar, egg yolks, glucose, honey, glycerine, cinnamon and vanilla in a saucepan. Place over low heat and cook, whisking constantly, until light, pale and piping hot.
Take off the heat then pour over the nut and icing sugar mix. Stir thoroughly to combine and mix together until you have a smooth paste. Knead lightly, wrap in clingfilm (plastic wrap) then transfer to the refrigerator and chill well before using.
