Spanokopita is the classic Greek pie of cheese and spinach.

Ingredients:

1kg fresh young spinach
450g filo pastry
250g Feta cheese
7 eggs
1 large onion, diced
sea salt, to taste
1 tsp oregano
60g butter
Salt and freshly-ground Black Pepper, to taste

Method:

Add a little oil to a frying pan and fry the onion gently until golden brown. Meanwhile was the spinach, transfer to a bowl and rub plenty of sea salt into it. Leave to sit for 15 minutes to draw the water from the spinach.

Beat the eggs in a large bowl, crumble the Feta cheese and add to the eggs. Rinse the spinach well to remove the salt. Drain and then add to the eggs along with the onions. Add the oregano and season with salt and black pepper.

Melt the butter and use it to coat the bottom of a 22cm x 32cm baking pan. Cover the base and sides of the pan with buttered filo pastry sheets (making sure you lay each at a different angle so they overlap maximally) and ensure you leave some overhang. Reserve enough pastry to cover the top of the dish.

Pour the egg and cheese mixture into the pan, fold over the overhanging sheets, butter the remaining filo sheets and use these to cover the top of the pie. With a sharp knife make some slits through the pastry then place the pie in a centre of an oven pre-heated to 190°C. Bake for about 50 minutes until the pastry is golden brown all over. When done, allow to cool a little and cut into squares. Serve hot.
